Good morning! Whoa, is it ever hot out! When I woke up this morning, all of my windows had condensation on them from the heat outside--at 6:15am!
Despite the heat, I still enjoyed some of my favorite coffee this morning while sitting at my kitchen table and blasting the AC. You have to do what you have to do!
Blackberry Pink Lemonade
A few weekends ago when I was at my parent's house, my mom and I crafted a recipe for homemade blackberry pink lemonade and it was so delicious that I have to share it with you! This is the perfect beverage for a hot day since it is so refreshing and has an unexpected fizz to it.
Here's what you'll need to whip up this tasty concoction:
- 4 lemons
- Fresh mint
- Seltzer water
- Handful of blackberries
- Ice
- Sugar to taste
- Additional mint and lemon slices to garnish, optional
Start off by juicing your lemons and adding them to a pitcher. You can add more or less lemon juice depending on your preferred level of tartness.
Next, coarsely chop the black berries and toss them in with the lemon juice. Give it all a stir and try to "squish" the blackberries a tiny bit--this will give your lemonade the fun pink color.
Next, add in some sugar to your liking--start out slow because you can always add more. Give it a stir and then move on to finely chopping some fresh mint--this gives it a refreshing kick! Add your mint and gently stir.
Next, fill a half of a glass with seltzer water, then pour in enough of the lemonade concentrate to make the glass 3/4 of the way full. Add some ice, extra mint and lemon slices, and take a sip! Mmm, summer...
